- 2 pounds ground chicken
- 2 eggs beaten
- ½ cup italian panko bread crumbs
- ¼ cup milk
- 1 teaspoon seasoned salt
- 1 teaspoon garlic powder
- ½ teaspoon ground black pepper
- ½ cup yellow onion finely diced
- ⅔ cup ketchup
- ½ cup brown sugar packed
- 1 ½ teaspoons prepared yellow mustard
Instructions
- Preheat the oven to 350°F and spray a loaf pan with non-stick spray.
- Combine ground chicken, eggs, panko bread crumbs, milk, seasoned salt, garlic powder, black pepper, and diced onion in a large bowl. Mix until just combined.
- Transfer the mixture to the prepared loaf pan and pat it down into an even layer.
- In a separate small bowl, mix ketchup, brown sugar, and mustard. Spread this sauce over the meat mixture in the loaf pan.
- Bake in the preheated oven for 1 to 1 hour and 15 minutes, or until the internal temperature reaches 165°F.
- Remove from the oven and let it rest for 10 minutes before slicing.
Notes
For added flavor, consider adding herbs like parsley or thyme to the meat mixture.
Serve this meatloaf with a side of mashed potatoes or steamed vegetables for a complete meal.
