- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 2 pounds chuck roast trimmed and cubed
- 2 teaspoons salt divided
- 1 teaspoon black pepper divided
- 1 medium onion diced
- 2 celery stalks diced
- 3 garlic cloves minced
- 4 cups beef broth
- 1 teaspoon italian seasoning
- 2 tablespoons cornstarch
- 2 tablespoons water
- 12 ounces egg noodles cooked according to package instructions
- Fresh parsley chopped, for garnish
Instructions
- Preheat the oven to 325°F (165°C). Heat the olive oil and butter in a large Dutch oven over medium-high heat.
- Season the beef cubes with 1 teaspoon of salt and ½ teaspoon of black pepper. Sear the beef in batches until browned on all sides, then remove and set aside.
- In the same pot, add the diced onion and celery. Cook for 3-4 minutes until softened, then add minced garlic and cook for an additional 30 seconds, stirring constantly.
- Pour in the beef broth and scrape the bottom of the pot to release the browned bits. Stir in Italian seasoning, remaining salt, and black pepper.
- Return the seared beef to the pot, ensuring it is submerged in the broth. Cover and transfer to the oven. Bake for 1 ½ to 2 hours until the beef is tender.
- Once done, remove the Dutch oven and place it on the stovetop over medium heat.
- Mix the cornstarch and water in a small bowl to create a slurry. Stir this into the beef mixture and simmer until the sauce thickens, about 2-3 minutes.
- During the last 10 minutes of beef cooking, prepare the egg noodles according to package instructions. Serve the beef and gravy over the noodles, garnished with fresh parsley. Enjoy!
Notes
For richer flavor, consider using beef chuck roast.
