Ingredients

Scale
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large orange bell pepper, cut into 1-inch pieces
  • 1 red onion, peeled and cut into 1-inch pieces
  • 1 medium zucchini, cut into slightly larger 1¼-inch pieces
  • 1 tablespoon avocado oil
  • 2 teaspoons old bay seasoning
  • 1/2 teaspoon garlic powder
  • 1 package (12 ounces) chicken sausage, sliced into thin rounds
  • lemon wedges, for serving

Instructions

  1. Season the vegetables by adding the bell peppers, onion, and zucchini to a mixing bowl. Drizzle with avocado oil and sprinkle with Old Bay seasoning and garlic powder. Toss to coat evenly (Cutting the zucchini slightly larger helps prevent overcooking).
  2. Slice the chicken sausage into thin rounds and add to the vegetable mixture. Toss gently to combine.
  3. Preheat the air fryer to 390°F if needed. Place the sausage and vegetables in an even layer in the air fryer basket (cook in batches if necessary). Air fry for 9-11 minutes, shaking the basket halfway, until tender and lightly browned.
  4. Transfer the sausage and veggies to a serving dish and squeeze fresh lemon juice over the top. Serve warm with extra lemon wedges if desired.
  5. To enjoy, serve on its own, over rice or cauliflower rice, or in tortillas for easy tacos.

Notes

For even cooking, cut zucchini slightly larger than the other vegetables.
You can vary the sausages used based on your taste preference.
