Ingredients
Scale
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 3 teaspoons baking powder
- 1/4 teaspoon kosher salt
- 2 large eggs whites and yolks separated
- 1 cup buttermilk
- 1/2 cup skim milk
- 1 cup unsalted butter melted
- 1 teaspoon pure vanilla extract
- 1 stick unsalted butter
- 1/2 cup granulated sugar
- 1/2 cup buttermilk
- 1/2 teaspoon baking soda
- 1/2 teaspoon pure vanilla extract
Instructions
- Preheat your waffle iron. In a large bowl, mix together the flour, granulated sugar, baking powder, and kosher salt.
- In a separate medium bowl, whisk the egg whites until stiff peaks form.
- In another large bowl, whisk the buttermilk, skim milk, melted butter, pure vanilla extract, and egg yolks until blended. Gradually stir this mixture into the dry ingredients until just combined. Gently fold in the stiff egg whites.
- For each waffle, scoop 1/2 cup of batter into the center of the preheated waffle iron. Close the lid and cook for about 2 1/2 minutes, or until the waffle is golden brown and crispy. Transfer the cooked waffles to a cooling rack. Continue this process until all the batter is utilized.
- For the buttermilk syrup, combine the stick of unsalted butter, sugar, and buttermilk in a small saucepan. Stir until melted and bring to a low boil. Remove from heat and stir in the baking soda and pure vanilla extract; the mixture will foam. Allow to sit, stirring occasionally until the foam subsides. Serve the waffles topped with your favorite fruit and drizzle with warm buttermilk syrup.
Notes
You can use different types of milk, but skim milk gave great results.
For extra flavor, consider adding cinnamon or nutmeg to the batter.
