- ½ teaspoon kosher salt
- ½ teaspoon fresh cracked pepper
- 1 small red onion, thinly sliced
- 4 cups watercress leaves , or mixed baby greens
- 2 medium tomatoes, thinly sliced
- 1 tablespoon avocado oil, divided
Instructions
- Marinate steak for at least 1 hour before cooking, or overnight for optimal flavor.
- Mix garlic, oyster sauce, agave or sugar, fish sauce, soy sauce, and sesame oil with the beef cubes.
- For the vinaigrette, whisk together rice vinegar, salt, and sugar until balanced in flavor.
- Thinly slice the red onion and pickle it using about ¼ cup of the vinaigrette in the fridge for 10 minutes.
- Arrange a platter with a bed of greens and sliced tomatoes.
- Create a dipping sauce by combining lime juice with salt and pepper in a small dish.
- Heat a large wok or pan over high heat until very hot. Add ½ tablespoon of avocado oil until smoking, then add half of the beef cubes to sear for about 2 minutes, shaking to sear all sides for another 1-2 minutes, then remove and set aside.
- Repeat the searing process with the remaining beef and oil.
- Place the beef over the greens and tomatoes, drizzle with the remaining vinaigrette, and top with the pickled onions.
- Serve with the lime dipping sauce.
Notes
Marinating the beef overnight enhances the flavor and tenderness significantly.
Adjust the level of sweetness and saltiness in the vinaigrette to match your preference.
Using a wok allows for even searing of the beef, which is crucial for the best texture.
