This Strawberry Poke Cake features a moist white cake infused with strawberry gelatin, topped with light and fluffy whipped cream, making it an ideal dessert for any occasion. Easy to prepare and absolutely delicious!

Ingredients

  • 1 (14.25 to 15.25-ounce) box white cake mix, plus any ingredients listed on box
  • 1 3-ounce box (4-serving size) Jell-O® strawberry-flavored gelatin, do not use instructions on box
  • 1 cup boiling water
  • 1 (8-ounce) tub whipped topping (Cool Whip), or 2 cups whipped cream, you could also use a tub of whipped fluffy white frosting
  • 12 fresh strawberries, cut in half


Instructions

  1. Prepare the white cake mix according to box directions and bake in a 9×13-inch baking dish. Allow it to cool for 15 minutes.
  2. Once slightly cooled, use the handle of a wooden spoon to poke holes in the cake every inch, piercing halfway down into the cake. Set aside.
  3. Dissolve the Jell-O® strawberry-flavored gelatin in a medium bowl by pouring 1 cup of boiling water over it, then whisk until it's fully dissolved.
  4. Pour the prepared strawberry gelatin evenly over the top of the cake. Let the cake cool completely on a cooling rack for about 1 hour.
  5. Refrigerate the cake for 3-4 hours before serving. Top with whipped topping just before serving and add a fresh sliced strawberry on top of each serving.

Notes

For an extra creamy topping, use freshly whipped cream instead of store-bought.
Feel free to substitute the strawberries with other fruits for varied flavors.
Make sure the gelatin is thoroughly dissolved for the best flavor penetration.
