  • 1/3 cup full-fat sour cream
  • 2 tablespoons whole milk
  • 1¼ cups fresh strawberries (diced small & patted dry with paper towel)
  • 1 tablespoon all-purpose flour
  • 6 ounces full-fat cream cheese softened
  • 1/3 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 cup all-purpose flour
  • 3 tablespoons granulated sugar
  • 2 tablespoons butter cold & cubed
  • 1 cup powdered sugar
  • 2-3 tablespoons heavy cream
  • ½ teaspoon pure vanilla extract


Instructions

  1. Preheat the oven to 425°F and prepare a standard 12-cup muffin pan with paper liners. Set the pan aside.
  2. In a large bowl, mix together the flour, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, cream the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, sour cream, and milk.
  4. Gradually blend the dry ingredients into the wet mixture until just combined. Carefully fold in the strawberries and a tablespoon of flour to prevent them from sinking while baking.
  5. In a separate bowl, beat the softened cream cheese with additional sugar and vanilla until smooth. In another bowl, combine flour, sugar, and cold butter, mixing until crumbly.
  6. Fill each muffin cup with the batter, then add a spoonful of the cream cheese mixture on top. Sprinkle with the crumb topping and bake for about 20-25 minutes or until golden brown. Let cool before serving.

Notes

Ensure strawberries are patted dry to avoid making the batter too wet.
These muffins can be frozen for future enjoyment, just reheat them in the oven for a fresh taste.
For a twist, try adding other fruits or spices like cinnamon to the batter.
