- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup granulated sugar
- 1/4 cup light brown sugar
- 1 whole large egg
- 1/2 cup vegetable oil
- 1/2 cup milk
- 2 teaspoon almond extract, or vanilla extract
- 1 3/4 cup chopped strawberries
- 2 Tablespoons all-purpose flour
- 1 cup powdered sugar
- 1/2 teaspoon almond extract, or vanilla extract
- 2 Tablespoons milk
Instructions
- Preheat the oven to 350º F and grease an 8×4 inch loaf pan.
- In a bowl, whisk together 2 cups of flour, baking powder, baking soda, and salt.
- In another bowl, whisk together the granulated sugar, brown sugar, egg, vegetable oil, milk, and almond extract until well combined.
- Mix the dry ingredients into the wet ingredients until no white streaks remain.
- Coat the chopped strawberries with 2 tablespoons of flour and gently fold them into the batter.
- Pour the batter into the prepared loaf pan and bake for 55-65 minutes until a tester comes out clean.
- Allow to cool for 10 minutes before removing from the pan to a wire rack.
- For the glaze, whisk together the powdered sugar, almond extract, and milk until pourable, adjusting as needed.
- Pour the glaze over the completely cooled bread.
Notes
Make sure to use fresh strawberries for the best flavor.
You can substitute almond extract with vanilla extract if preferred.
Store any leftovers in an airtight container at room temperature.
