  • 8 ounces milk 90ºf
  • 1 cup sourdough discard doesn't have to be exact
  • 10 grams dried instant yeast
  • 28 ounces bread flour or all purpose flour
  • 8 ounces butter softened
  • 4 ounces sugar
  • 1 teaspoon salt
  • 3 large eggs room temperature
  • 1 tablespoon honey optional
  • 8 ounces heavy cream (for soaking the rolls)
  • 8 ounces unsalted butter softened to almost melted
  • 8 ounces brown sugar
  • 2 tablespoons cinnamon
  • 8 ounces cream cheese softened
  • 4 ounces unsalted butter softened
  • 4 ounces powdered sugar
  • ½ teaspoon salt
  • 1 tablespoon heavy whipping cream or less if you like a thicker consistency
  • 1 tablespoon vanilla extract


Instructions

  1. Warm the milk to 90ºF and bring eggs and butter to room temperature.
  2. Line a 13"x18" sheet pan with parchment paper and prepare the stand mixer with the dough hook attached.
  3. Combine the sourdough discard and dried instant yeast in the mixer bowl.
  4. Gradually add in the bread flour, softened butter, sugar, salt, eggs, and optional honey.
  5. Knead the dough until it becomes smooth and elastic, then let it rise until doubled in size.
  6. Roll out the dough on a floured surface and spread with softened unsalted butter, brown sugar, and cinnamon mixture.
  7. Roll the dough tightly and slice into equal pieces, placing them in the prepared pan.
  8. Cover and let the rolls rise until puffy, then soak with heavy cream before baking.
  9. Bake in the oven until golden brown, then let cool slightly before frosting. Prepare the frosting by blending cream cheese and powdered sugar with a bit of salt, cream, and vanilla extract.

Notes

For an extra flavor boost, consider adding vanilla extract to the dough mixture.
Ensure the milk is warm, not hot, as it activates the yeast without killing it.
Feel free to substitute buttermilk for a different flavor profile.
