  • ⅔ cup (150g) salted butter, softened
  • 1 cup plus 2 tbsp (225g) granulated sugar
  • 2 tablespoon lemon zest
  • 1 large egg room temperature
  • 1 large egg yolk room temperature
  • 1 tablespoon (15ml) lemon juice
  • 1 teaspoon (5ml) pure vanilla extract
  • 2 cups (284g) all-purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 3 tablespoon (40g) granulated sugar
  • 1 teaspoon lemon zest


Instructions

  1. In a large bowl, mix softened butter, sugar, and lemon zest with an electric hand mixer on medium-high speed for 1-2 minutes until pale and slightly fluffy. Alternatively, use a stand mixer, scraping the bowl sides as needed.
  2. Add in the egg and mix until well incorporated. Then, add the egg yolk, vanilla, and lemon juice, mixing until smooth and creamy.
  3. In a separate bowl, whisk together flour, baking soda, baking powder, and salt until evenly blended.
  4. Fold the dry ingredients into the butter mixture until incorporated. The dough should be soft but not sticky.
  5. Cover the bowl and refrigerate the dough for 2 hours.
  6. Preheat the oven to 350°F and line two large cookie sheets with parchment paper.
  7. Make lemon sugar by combining sugar and lemon zest in a small bowl, rubbing them together until fragrant.
  8. Scoop dough using a 1.25-oz cookie scoop, roll into balls, and coat each ball in the lemon sugar mixture.
  9. Place cookie dough balls on the prepared baking trays, spaced 3 inches apart. Bake for 9-11 minutes until lightly golden on the edges and slightly soft in the middle. For flatter cookies, flatten the balls slightly before baking. Allow cookies to cool for 2 minutes before transferring to a wire rack.
