- cooking oil spray, optional, to help coating brown
- ½ cup plain greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon fresh lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried dill
- ½ teaspoon dried parsley
- 1¼ cups panko breadcrumbs
- ¼ cup finely grated parmesan cheese
- 1 1/2 tablespoons of your favorite seasoning mix, like taco, italian, jerk, or all purpose
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F and set a wire rack over a baking sheet for extra crispiness.
- In a bowl, combine greek yogurt, mayonnaise, lemon juice, garlic powder, onion powder, dried dill, and dried parsley.
- Season the chicken breasts with salt and pepper, then coat them with the yogurt mixture.
- In another bowl, mix panko breadcrumbs, parmesan cheese, and your chosen seasoning mix. Dip each coated chicken breast into this breadcrumb mix until fully coated.
- Place the coated chicken breasts onto the prepared wire rack on the baking sheet.
- Spray lightly with cooking oil if desired for added browning.
- Bake in the preheated oven for about 45 minutes, until the chicken is cooked through and golden brown.
Notes
For a spicier option, use a spiced seasoning mix.
Feel free to substitute the yogurt with sour cream for a richer flavor.
