  • 2 large eggs
  • 1 cup potato chips, plain or lightly salted, crushed
  • 2 teaspoons dry mustard
  • 2 teaspoons garlic powder
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 1 medium yellow onion, thinly sliced
  • 8 oz (227 g) baby bella mushrooms, cleaned and sliced (about 3 cups)
  • 2 cups (16 ounces) beef broth
  • 1 tablespoon cornstarch
  • 4 dashes Worcestershire sauce
  • Salt and black pepper, to taste


Instructions

  1. In a large bowl, mix ground beef, eggs, crushed potato chips, dry mustard, garlic powder, kosher salt, and black pepper gently with your hands until combined.
  2. Shape the mixture into 4 equal patties of about ½-inch thickness. Set aside.
  3. Heat butter and olive oil in a large 12-inch skillet over medium-high heat. Cook the patties for 4 to 5 minutes on each side until browned and internal temperature reaches 160°F.
  4. Transfer the patties to a plate and drain excess grease, keeping about 1 tablespoon in the skillet.
  5. Add sliced onions and mushrooms to the skillet and cook until onions are soft and mushrooms are browned, about 6 to 8 minutes.
  6. In a small bowl, whisk beef broth and cornstarch until smooth. Pour this mixture into the skillet with onions and mushrooms, then stir in Worcestershire sauce.
  7. Bring to a gentle simmer over medium-low heat, stirring occasionally until gravy thickens, about 2 to 3 minutes. If too thick, add a splash of beef broth.
  8. Return the patties to the skillet and nestle them into the gravy, spooning some of the gravy over them.
  9. Simmer gently for 2 to 3 minutes until everything is heated through.
  10. Serve hot with extra onion-mushroom gravy spooned over each patty.

Notes

For extra flavor, consider adding fresh herbs like thyme or parsley to the gravy.
Serve with mashed potatoes or rice to enjoy the gravy to its fullest.
