Ingredients

  • 4 baby bok choy, sliced in half lengthwise (if very large, cut in fourths)
  • 1 tablespoon extra virgin olive oil
  • Salt and black pepper
  • 1 tablespoon honey
  • 1 tablespoon low sodium soy sauce
  • 1 teaspoon rice vinegar
  • ½ clove garlic, minced
  • Pinch of red pepper flakes (or sub black pepper)
  • Sliced green onions
  • Sesame seeds


Instructions

  1. Preheat the oven to 425 degrees F and line a baking sheet with aluminum foil for easy cleanup if desired.
  2. Drizzle olive oil over the baby bok choy and sprinkle lightly with salt and black pepper. Place the bok choy cut side down on the baking sheet.
  3. Roast at 425 F for 10 minutes, then flip the bok choy pieces and roast for another 5 minutes.
  4. Remove from the oven, drizzle with the honey garlic sauce, and sprinkle with green onions and sesame seeds if using. Serve immediately.

Notes

For more flavor, add additional spices to the honey garlic sauce.
Ensure the bok choy is thoroughly washed before slicing and cooking.
Experiment with different toppings like crushed nuts or chili flakes for added texture.
