- 1 1/2 cups (180g) whole wheat pastry flour or all-purpose flour
- 1 cup (90g) quick oats
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt

- 1/4 teaspoon ground nutmeg, optional
- 1 cup (148g) raspberries
- 1/2 cup (170g) honey or maple syrup
- 1/4 cup (48g) melted coconut oil, avocado oil or another neutral oil
- 1/4 cup (57g) unsweetened applesauce
- 2 large eggs at room temperature and lightly beaten
- 1 cup (240g) plain greek yogurt
- 1/2 teaspoon vanilla extract
- 1 tablespoon turbinado sugar optional for sprinkling
Instructions
- Preheat the oven to 425℉. Line a 12-cup standard muffin pan with paper liners or grease it with nonstick cooking spray.
- In a large bowl, combine the whole wheat pastry flour or all-purpose flour, quick oats, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.
- Gently fold the raspberries into the flour mixture to prevent them from sinking during baking.
- In another bowl, whisk together the honey or maple syrup, melted coconut oil, unsweetened applesauce, eggs, plain Greek yogurt, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and mix until just combined, ensuring some lumps remain.
- Divide the batter into the muffin cups, filling them to the top and sprinkle with turbinado sugar.
- Bake for 5 minutes at 425ºF, then reduce the temperature to 350℉ and bake for an additional 15 to 17 minutes until lightly golden and a toothpick comes out clean. Cool in the pan for 5 minutes before moving to a wire rack.
Notes
For extra moisture, add a little more applesauce if desired.
These muffins can be stored in an airtight container for up to 3 days, or frozen for longer storage.
Make sure the eggs are at room temperature for better mixing.
