- 3 large over ripe bananas, 1 1/3 cups mashed
- 2 large eggs
- 1/2 cup applesauce, unsweetened
- 1/3 cup maple syrup
- 1 teaspoon pure vanilla extract
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup whey protein powder, I used vanilla flavor
- 1 3/4 cups oat flour
Instructions
- Preheat the oven to 350 degrees F. Line a 9 x 5 inch metal loaf pan with parchment paper and set aside.
- In a large mixing bowl, mash the bananas with a fork or masher. Add the eggs, applesauce, maple syrup, vanilla extract, cinnamon, baking powder, baking soda, and salt. Whisk until everything is combined well.
- Stir in the whey protein powder and oat flour gently using a spatula until just combined.
- Pour the batter into the prepared loaf pan and bake for 60-65 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, take the bread out of the oven and let it cool in the pan for 10 minutes. Then remove it from the loaf pan and transfer it to a cooling rack to cool for about an hour.
- Slice the cooled bread with a serrated knife to avoid crumbling.
Notes
Make sure the bananas are very ripe to enhance sweetness and flavor.
You can substitute oat flour with whole wheat flour if preferred.
For added texture, consider folding in nuts or chocolate chips.
