- 1 ripe banana, mashed

- a variety of fruits or chocolate chips, optional toppings
- Maple syrup, to serve
Instructions
- Preheat the oven to 350°F and grease a mini-muffin pan with cooking spray.
- In a bowl, mix the mashed banana, eggs, vanilla extract, coconut oil, and milk until combined.
- Add the flour and baking powder to the bowl and whisk until the mixture is smooth. Optionally, stir in sugar for added sweetness.
- Spoon 1 tablespoon portions of the batter into the greased muffin pan and add any optional toppings like fruits or chocolate chips.
- Bake for 18-20 minutes or until the muffins are golden brown on top. Serve warm with maple syrup or enjoy plain.
Notes
To enhance flavor, consider adding cinnamon or nutmeg to the batter.
Make sure the muffin pan is well-greased to prevent sticking.
You can store leftovers in an airtight container for up to 3 days.
