Ingredients

  • 4 large egg whites room temperature
  • 1 cup white granulated sugar
  • ¾ teaspoon cream of tartar
  • ½ teaspoon vanilla extract
  • Pinch of salt


Instructions

  1. Set a heat-proof mixing bowl on top of a saucepan with two inches of water.
  2. Add the egg whites, sugar, and salt to the bowl.
  3. Heat the water to a boil over medium heat while whisking the egg mixture.
  4. Slowly heat the egg mixture until very frothy.
  5. Check if the sugar has dissolved by touching it with your finger, being cautious of the heat.
  6. Once ready, remove from heat and add the vanilla extract.
  7. Using a hand mixer or stand mixer, whip at high speed for 5-10 minutes until thick peaks form.
  8. Your marshmallow frosting is ready to be piped or spread.

Notes

Make sure your mixing bowl is heatproof to avoid any accidents.
This frosting can be used immediately or stored in an airtight container for up to two days.
If you want a richer flavor, you can add a hint of almond extract along with the vanilla.
