  • 2 large eggs (room temperature)
  • ½ cup milk (2% or whole milk)
  • 1 tablespoon butter
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • ½ cup brown sugar (lightly packed)
  • ¼ cup butter (melted and cooled)
  • ¼ cup cream (heavy or whole cream)
  • 1 cup unsweetened shredded coconut


Instructions

  1. Preheat the oven to 350°F (180°C) and grease an 8-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a small saucepan, heat the milk and butter until the butter melts; then remove from heat.
  4. In a large bowl, beat the eggs until thick (about 3 minutes), gradually adding sugar while beating. Add the vanilla, flour mixture, and hot milk.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Once baked, set the oven to broil, spread the topping on the cake, and broil until caramelized and golden. Watch carefully to prevent burning.
  7. Serve warm or cold and enjoy!
