- 16 oz. ribeye or New York strip, ~2 steaks
- 2 teaspoons kosher salt
- 1 large sweet potato, peeled and cubed
- 4 tablespoons olive oil, separated
- 1 teaspoon garlic powder
- ½ teaspoon chili powder
- 2 teaspoons sea salt, separated
- 2 large bell peppers, seeded and sliced
- ½ large white onion sliced
- 1 cup 2% cottage cheese
- 3 tablespoons shredded cheddar cheese
Instructions
- Massage the steak with kosher salt and set aside for 10 minutes to sit at room temperature.
- Preheat the oven to 400ºF. On a baking sheet, toss the sweet potatoes with 1 tablespoon of olive oil, garlic powder, chili powder, and 1 teaspoon of salt until well coated.
- Bake the sweet potatoes for 10 minutes, then toss them. After 10 minutes, push them to one side of the pan and add the sliced peppers and onions to the other side. Toss the veggies with 1 tablespoon of olive oil and 1 teaspoon of sea salt, then continue baking for another 10-15 minutes until fork-tender.
- In a large cast-iron skillet over high heat, heat 2 tablespoons of olive oil and add the steaks. Cook for 2-4 minutes on each side until the desired doneness is reached (internal temperature 160-165ºF). Remove from the heat and let rest for 10 minutes.
- Blend the cottage cheese, shredded cheddar, and ½ teaspoon sea salt in a blender until smooth. Transfer to a microwave-safe bowl and microwave for 1 minute, stirring halfway.
- Return the queso to the blender and blend again until smooth. Set it aside.
- Slice the cooked steak thinly and then mince into small pieces.
- In four bowls, evenly distribute the sweet potatoes, peppers, onions, and steak. Top each bowl with the blended cottage cheese and serve immediately.
Notes
For a vegetarian option, substitute steak with mushrooms or tofu.
Feel free to adjust the vegetables as per your preference or seasonal availability.
