- 1 tablespoon olive oil
- 1 small white onion, finely diced
- 1 pound lean ground beef
- 14.5 ounces black beans, one can, drained & rinsed
- 3-4 garlic cloves, minced
- 2 tablespoons tomato paste
- ½ cup beef broth
- 1 1/2 taco seasoning
- 1 small red onion, thinly sliced
- 3 tablespoons vinegar, apple cider or white
- 3 tablespoons warm water
- 1 pinch kosher salt
- 8 small flour tortillas, corn tortilla works
- 1 cup cherry tomatoes, halved or quartered
- 1 cup shredded romaine lettuce
- 1 cup shredded cheese
- Lime wedges
- Jalapeno, thinly sliced
Instructions
- Prepare the quick-pickled red onion by combining 3 tablespoons of vinegar, 3 tablespoons of warm water, 1 pinch of kosher salt, and the sliced red onion in a small bowl. Let it marinate for at least 15 minutes.
- Heat the olive oil in a large skillet over medium heat, add the finely diced white onion, and sauté until softened and slightly golden, about 5 minutes.
- Add the ground beef, taco seasoning, and minced garlic to the pan. Break up the meat with a spoon as it cooks.
- Once the beef is beginning to brown, incorporate the tomato paste and beef broth, stirring to combine.
- Scrape the bottom of the pan to release browned bits and allow the mixture to simmer for 3-5 minutes until slightly thickened.
- Fold in the drained and rinsed black beans and warm for an additional 2-3 minutes.
- Season with salt and pepper to taste.
- Prepare all taco ingredients for assembly.
- Assemble the tacos by distributing the beef and bean mixture among the flour tortillas. Top with cherry tomatoes, shredded romaine lettuce, pickled onions, and shredded cheese. Garnish with lime wedges and sliced jalapenos.
Notes
Feel free to customize toppings such as adding avocado or sour cream.
For a spicier kick, include more jalapeno or a dash of hot sauce.
Use corn tortillas for a gluten-free option.
