- 1 ¾ cups (250g) all-purpose flour
- 1 ¼ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup (240g) full fat plain Greek yogurt, at room temperature
- ½ cup (150g) pure maple syrup
- ⅓ cup (80ml/65g) liquid oil (I like to use olive oil)
- 2 large eggs, at room temperature
- 1 teaspoon (5ml) pure vanilla extract
- ¼ cup (60ml) whole milk, at room temperature
- ½ cup (85g) semisweet chocolate chips (I use a blend of regular and mini dark chocolate chips)
- 2 tablespoon coarse raw sugar for sprinkling on top
Instructions
- Preheat the oven to 375°F and line a standard 12-cup muffin pan with paper liners. Use high-quality parchment paper liners to prevent sticking.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt until well mixed.
- In another large bowl, whisk Greek yogurt, maple syrup, oil, eggs, vanilla, and milk until smooth and well combined. Gradually incorporate the dry ingredients into this mixture, folding gently with a spatula.
- Once mostly combined, add the chocolate chips and continue folding until they're evenly distributed throughout the batter.
- Scoop the batter into prepared muffin liners, filling each one to the top. For an extra treat, sprinkle more chocolate chips and a generous amount of coarse sugar on top.
- Bake for 15-20 minutes, or until the tops are golden and a skewer inserted into the center comes out clean. Remove from the oven and let cool in the pan for 5 minutes before transferring to a wire rack.
Notes
For best results, make sure all ingredients are at room temperature before mixing.
These muffins can be stored in an airtight container at room temperature for up to 3 days.
You can substitute the chocolate chips with nuts or dried fruit if desired.
