- 1 cup butter, softened
- 1 1/3 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 8 ounces cream cheese, softened
- 4 tablespoons butter, softened
- 1 teaspoon vanilla extract (or either 1 tsp almond extract or 1 tsp lemon extract)
- 1 1/4 cups powdered sugar
- fresh strawberries, blueberries, and kiwi (or any other fruit that you like)
- 2 tablespoons apricot, apple or orange jam, jelly, or marmalade
- 1 teaspoon water
Instructions
- Preheat the oven to 350ºF and spray a full-size cookie sheet with nonstick cooking spray.
- In a large bowl, cream the softened butter and granulated sugar together until smooth. Then, mix in the eggs and vanilla extract.
- Add flour, cream of tartar, baking soda, and salt to the mixture, and mix until fully combined.
- Drop the dough onto the cookie sheet, flattening it with your fingers. Use a rubber spatula to create space around the edges for spreading during baking.
- Bake for 10-12 minutes or until lightly browned. Cool completely for about 30 minutes.
Notes
You can personalize the fruit toppings according to your preference.
Ensure the cookie base cools completely before adding toppings to prevent melting of the frosting.
