Fondant Potatoes are a delightful side dish featuring tender Russet potatoes infused with garlic and herbs. This simple recipe makes for an unforgettable meal, perfect for festive dinners or casual gatherings.

Ingredients

  • 4 large Russet Potatoes
  • 3 tbsp olive oil or avocado oil
  • 3 tbsp butter
  • 1 tsp salt or to taste
  • 3 cloves garlic peeled and smashed
  • 4 sprigs fresh thyme
  • 4 sprigs fresh rosemary
  • ½ cup chicken stock or broth, add more as needed
  • black pepper to taste


Instructions

  1. Preheat the oven to 425° F.
  2. Slice the ends off each potato to create two flat surfaces.
  3. Stand each potato on one end and peel from top to bottom to form uniform cylinders.
  4. Cut the potatoes in half.
  5. Soak the halves in a bowl of ice water for 5 minutes to reduce starch.
  6. Remove from the water and thoroughly dry the potatoes with paper towels.
  7. In an oven-safe pan, add olive oil and butter, and heat over high heat.
  8. Place the potato halves in the pan, browning one flat side well, then lower the heat to medium-high and cook for about 6 minutes.
  9. Season the tops of the potatoes liberally with salt.
  10. Carefully flip the potatoes to brown the opposite flat side, salting the already browned side as well.
  11. Add garlic, thyme, and rosemary to the pan, allowing them to infuse the oil for a few minutes.
  12. Baste the potatoes with infused oil using a spoon or a sprig of rosemary.
  13. Pour the chicken stock into the pan and transfer it to the oven.
  14. Roast for 30-40 minutes, or until the potatoes achieve tenderness when pierced with a knife.
  15. Remove from the oven and serve with any remaining liquid spooned over the potatoes.
  16. Season with freshly ground pepper to taste, if desired.

Notes

Choose long and narrow Russet potatoes for even cooking.
Make sure to pat the potatoes dry thoroughly before browning to achieve a good crust.
Roasting times may vary based on the size of the potato halves.
