- 2 cups roasted chicken, shredded
- 1 1/2 tablespoons extra virgin olive oil
- 1/2 small, diced yellow onion (about 3/4 cup)
- 1/2 poblano, seeded and diced (about 3/4 cup)
- 2/3 cup fresh corn kernels (or canned corn, rinsed and drained)
- 1/3 cup prepared salsa
- 2 tablespoons sour cream
- 4 ounces shredded Pepper Jack cheese (about 1 cup)
- 14 6-inch flour tortillas warmed
- 5 cups frying oil of choice
- salt and pepper to taste
- 1/2 cup sour cream
- 2 tablespoons hot sauce (of choice)
- 1 zested and juiced lime (about 3 1/2 tablespoons of lime juice)
Instructions
- Preheat the oil in a large pot over medium heat to 350˚F.
- Combine shredded chicken in a mixing bowl and set aside.
- In a medium sauté pan, heat olive oil over medium-high heat. Add diced onion, poblano, and corn; sauté for about 6 minutes, seasoning with salt and pepper.
- Transfer the sautéed mixture to the bowl with chicken and mix to combine.
- Incorporate remaining filling ingredients into the chicken mixture, ensuring even distribution and seasoning.
- Place about 1/4 cup of the filling on one side of a tortilla and roll it tightly, using toothpicks to secure the ends if needed. Lay the rolled tortilla on a baking sheet.
- Repeat the rolling process with remaining tortillas and filling until complete.
- Fry flautas in batches until they are golden brown, about 3 to 4 minutes each. Remove from oil and let drain on a cooling rack-lined baking sheet. Serve immediately with dipping sauce.
Notes
For extra flavor, consider adding spices like cumin or chili powder to the filling mixture.
