Ingredients

  • 20 oz english peas fresh, shelled
  • 2 oz blue cheese crumbled
  • 1/2 cup bacon crumbled
  • 1/4 cup red onion diced
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • salt & black pepper to taste
  • 1 tsp dried dill


Instructions

  1. Boil a pot of water, adding salt.
  2. Cook the shelled peas in boiling water for 90 seconds to 2 minutes.
  3. Drain the peas and transfer them to ice water to cool.
  4. After cooling, drain again and dry the peas on clean dish towels, removing any brown peas or debris.
  5. In a large bowl, combine the dried peas, crumbled blue cheese, and bacon.
  6. In a separate bowl, mix together mayonnaise, sour cream, diced red onion, salt, pepper, and dried dill until smooth.
  7. Pour the dressing over the pea mixture and stir to coat. Serve immediately or chill in the refrigerator until ready to serve.

Notes

Ensure peas are fresh for the best flavor.
You can substitute Greek yogurt for a lighter dressing option.
Add fresh herbs like parsley or chives for extra flavor.
