- 3 cups (about 1 pound) shredded or cubed chicken*
- 1/2 cup (68g) finely diced celery, about 1½ stalk
- 1/2 cup (32g) finely sliced green onions, about 4 whole green onions
- 1/2 cup (79g) dried cranberries, craisins, or other dried fruit
- 1/2 cup (59g) chopped pecans, walnuts or almonds work too
- 1/2 cup (120g) plain greek yogurt, or use additional mayo
- 1/2 cup (115g) mayonnaise, or use additional greek yogurt
- 1 tablespoon (15g) dijon mustard
- 2 teaspoons (22g) lemon juice, optional, about 1/2 large lemon
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon ground black pepper, or to taste
Instructions
- Cook the chicken by seasoning it with salt and pepper, then baking at 375ºF for 15 minutes on each side or pan-fry in a skillet over medium-high heat for 8-10 minutes on each side until cooked through.
- Shred or chop the cooked chicken and place it in a large bowl. Add the finely diced celery, sliced green onions, dried cranberries, and chopped pecans.
- In another bowl, mix together Greek yogurt, mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.
- Pour the dressing over the chicken mixture and toss well to combine. Serve on your choice of bread, crackers, lettuce wraps, or tortillas.
Notes
Feel free to substitute rotisserie or pre-cooked chicken to save time.
Experiment with different nuts like walnuts or almonds for variety.
