- 1 cup full-fat cottage cheese
- 1 large egg
- ½ teaspoon sea salt
- 1 ½ teaspoons baking powder
- 1 to 1 ¼ cup all-purpose flour
- 2 tablespoons olive oil
- ½ cup pizza sauce
- 1 teaspoon dried oregano
- a handful fresh basil
- ½ -¾ cup mozzarella cheese shredded
Instructions
- Preheat the oven to 425°F (220°C). Line a large sheet pan with parchment paper and brush it with olive oil.
- Blend the cottage cheese, egg, sea salt, and baking powder until smooth.
- Transfer the mixture to a large bowl and add 1 cup of all-purpose flour. Mix until a dough forms, then knead for a few minutes until smooth and non-sticky. Use the extra ¼ cup of flour only if necessary to avoid a dense crust.
- Spread the dough into a large circle on the prepared sheet pan to your desired thickness, brushing the top with the remaining tablespoon of olive oil.
- Bake the crust for 10 to 12 minutes, or until golden brown. Remove from the oven, add your favorite toppings, then lower the oven temperature to 375°F (190°C) and bake for an additional 8 to 10 minutes until the cheese is melted.
Notes
For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend.
Feel free to customize toppings based on your preferences, including vegetables or different cheese types.
The crust can be prepped ahead and stored in the fridge for later baking.
