Ingredients

  • 2 large eggs
  • 3/4 cup egg whites, or 6 large egg whites
  • 2/3 cup cottage cheese
  • 1/2 cup milk
  • 2/3 cup all-purpose flour
  • 2 teaspoons pure vanilla extract
  • 1 pinch salt
  • Avocado oil or butter, for greasing the skillet, optional


Instructions

  1. Add eggs, egg whites, cottage cheese, milk, flour, vanilla, and salt to a high-speed blender.
  2. Blend on high until smooth and let the batter rest for 5 minutes.
  3. Preheat a non-stick crepe skillet over medium heat.
  4. Pour 1/3 cup of batter into the skillet and quickly swirl to cover the bottom.
  5. Cook each side for 45-60 seconds, flipping once the edges appear set.
  6. Serve with powdered sugar, fruit, or chocolate sauce as desired.

Notes

Letting the batter rest improves the texture of the crepes.
Use a non-stick skillet for best results in cooking the crepes.
