Ingredients

- 1 flank steak (2-3 pounds)
- 4 cloves garlic
- 2 chipotles in adobo (from a can)
- 2 tablespoons olive oil (extra virgin)
- 2 limes (juiced)
- 2 tablespoons honey
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 ½ teaspoons salt
- ½ teaspoon black pepper
Instructions
- Combine 4 cloves of garlic, 2 chipotles in adobo, 2 tablespoons of olive oil, juice of 2 limes, 2 tablespoons of honey, 1 tablespoon of chili powder, 2 teaspoons of ground cumin, 1 teaspoon of dried oregano, 1 ½ teaspoons of salt, and ½ teaspoon of black pepper in a blender. Blend until smooth, adding water if necessary.
- Pour the marinade over the flank steak in a casserole dish or large ziplock bag. Allow it to marinate for 30 minutes or up to overnight.
- Preheat a grill or grill pan to high heat.
- Once the grill is hot, add the steak and cook for 3-5 minutes per side for medium rare (132 degrees). Transfer the steak to a cutting board and let it rest for 5 minutes. Slice against the grain and serve.
Notes
For a spicier kick, add more chipotles in adobo to the marinade.
Allowing the steak to marinate overnight enhances the flavor even more.
