Ingredients

  • 2 cups cooked shredded chicken
  • 3 cups romaine lettuce chopped
  • 2 cups napa cabbage chopped
  • 1 cup shredded carrots
  • ½ cup green onions chopped
  • 1 red bell pepper chopped
  • ⅓ cup fresh cilantro chopped
  • ⅓ cup sliced almonds
  • 3 tablespoons rice vinegar
  • 2 tablespoon reduced sodium soy sauce
  • 3 teaspoon minced garlic
  • 2 tablespoon honey
  • 1 teaspoon ground ginger
  • 2 teaspoons sesame oil
  • 3 tablespoons olive oil
  • ½ teaspoon pepper
  • 1 chopped chow mein noodles
  • 2 teaspoons sesame seeds


Instructions

  1. Prepare the dressing by combining all dressing ingredients in a sealed jar and shaking well until mixed.
  2. In a large bowl, combine all salad ingredients and toss thoroughly.
  3. Drizzle the dressing over the salad and mix until everything is evenly coated. Garnish with sesame seeds and chow mein noodles before serving.

Notes

Feel free to substitute cooked chicken with grilled shrimp or tofu for a different protein option.
Add some spicy sauce or chili flakes if you prefer a kick in your salad.
