- 1 ½ pounds chicken breast diced into small cubes
- 2 Tablespoon olive oil
- 1 ounce taco seasoning (1 package)
- 2 cups shredded Mexican Cheese
- ¼ cup salsa
- 4 flour tortillas burrito size
Instructions
- Preheat a large skillet over medium high heat.
- Cut the chicken into small cubes and place in a medium mixing bowl. Add the taco seasoning and mix well to coat the chicken evenly.
- Spread 1 tablespoon of olive oil on the skillet. Add the chicken in an even layer and sauté for 3-4 minutes on each side until lightly browned but not fully cooked.
- Top the chicken with salsa and toss to coat. Cook until the chicken reaches an internal temperature of 165°F, about 3-4 more minutes.
- Remove the chicken from the skillet and place it on a plate. Reduce the heat to medium low.
- To assemble the quesadillas, lay a tortilla flat on a cutting board. Spread cheese on one half, add chicken on top, then add more cheese before folding the tortilla in half.
- Add the remaining 1 tablespoon of olive oil to the skillet and cook 2 of the assembled tortillas until golden brown on one side (2-3 minutes). Flip and cook the other side until golden brown (2-3 minutes).
- Remove the quesadillas, slice, and serve immediately.
Notes
Feel free to add your favorite vegetables like bell peppers or onions for extra flavor.
Serve with additional salsa, sour cream, or guacamole for dipping.
