  • 1 ½ pounds chicken breasts cubed
  • 2 tablespoons olive oil divided
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 red onion sliced
  • 3 cloves garlic minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ¾ cup light sour cream
  • 2 tablespoons fresh lime juice
  • ½ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • 3 tablespoons water
  • Toppings: cheese, shredded lettuce, avocado, pico de Gallo, salsa, crushed tortilla chips, cilantro, extra lime optional


Instructions

  1. Whisk together sour cream, lime juice, garlic powder, and salt in a small bowl.
  2. Add water to the mixture until it reaches a drizzling consistency, but remains thick.
  3. Cover the mixture and refrigerate until ready to use in the bowls.

Notes

Feel free to customize the toppings based on your preference.
For added spice, include jalapeños or hot sauce to the bowls.
