Ingredients

  • 1 pound broccoli with stems
  • 4 spring onions, thinly sliced
  • ½ cup raisins, or craisins
  • 1 cup shelled sunflower seeds, or pumpkin seeds
  • ½ cup mayonnaise
  • ⅓ cup buttermilk
  • 1 lemon, juiced
  • 2 teaspoons dried dill weed
  • salt and freshly ground black pepper, to taste
  • 1 tablespoon maple syrup, or honey


Instructions

  1. Separate the broccoli florets from the stems. Discard the thicker outer layers of the stems after peeling.
  2. Grate the broccoli florets and stems using a grater box with larger holes.
  3. In a bowl, mix the grated broccoli with spring onions, raisins, and sunflower seeds.
  4. In another bowl, whisk together the dressing ingredients and pour them over the broccoli mixture. Stir gently until everything is well combined.
  5. Cover and chill the slaw in the fridge for 30 minutes before serving.

Notes

For a nuttier flavor, you can substitute sunflower seeds with pumpkin seeds.
Adjust sweetness by adding more or less maple syrup or honey based on your preference.
