- 1 package fast-acting dry yeast (0.25 oz)
- 2 tablespoons milk lukewarm
- 3/4 cup water lukewarm
- 3 tablespoons granulated sugar
- 3½ cups all-purpose flour
- 1 large egg room temperature
- 6 tablespoons unsalted butter softened, cubed
- ⅓ teaspoon baking powder
- ½ teaspoon salt
- Oil for frying
- 1 cup milk
- 2 egg yolks
- 1 tablespoon cornstarch
- ¼ cup granulated sugar
- 1 tablespoon unsalted butter
- 1 teaspoon vanilla extract
- 4 ounces semisweet chocolate chips
- ⅓ cup heavy cream
Instructions
- Combine the warm water, warm milk, sugar, and yeast in a large bowl. Whisk to dissolve the yeast and allow it to proof for about 5 minutes or until foamy.
- Add flour, egg, butter, baking powder, and salt. Knead for about 5 minutes until the dough is smooth.
- Place the dough into a greased bowl, cover with plastic wrap, and let it rise in a warm place for about an hour until doubled in size.
- Punch down the dough, roll it out to 1/2-inch thickness on a floured surface, and cut with a 3-inch round cutter. Transfer to a floured parchment-lined baking sheet, cover, and let proof for an additional 15 minutes.
- Heat 2 inches of oil in a pot to 350-360°F. Fry 2-3 donuts at a time for about 2 minutes per side until golden brown.
- Remove the donuts and let them cool completely on a wire rack covered with paper towels before filling.
Notes
Ensure the water is not too hot when proofing the yeast to avoid killing it.
Use a thermometer to maintain the oil temperature for even frying.
You can fill these donuts with your favorite cream or custard as well.
