- 3/4 cup whole wheat flour
- 1/2 cup rye flour
- 1/2 cup finely ground corn meal
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp kosher salt
- 1/2 tsp allspice
- 3/4 cup raisins
- 1 cup buttermilk
- 2 tsp vanilla extract
- 1/2 cup grandma’s original molasses
Instructions
- Set the steamer rack inside a tall stockpot and fill the pot with water up to one-third of the coffee can(s). Turn the heat to medium while preparing the batter.
- Preheat the oven to 325°F and bring a large pot of water to a boil. Grease the inside of the can(s) or loaf pan with butter.
- In a large bowl, whisk together all the dry ingredients.
- In another bowl, mix the wet ingredients thoroughly. Pour the wet mix into the dry ingredients and stir with a spatula until well combined.
- Quickly divide the batter into the prepared loaf pan or fill the can(s) two-thirds full. Cover with foil and secure tightly, using a rubber band or kitchen twine if necessary.
Notes
Ensure the can(s) are well-greased to prevent sticking.
Adjust the amount of molasses for varying sweetness levels.
