Ingredients
Scale
- 1 pound ground beef
- 19 ounces red enchilada sauce (1 can)
- 4.5 ounces chopped green chiles (1 can)
- 10 flour tortillas 6 inches each
- 2 cups cheddar cheese shredded
Instructions
- Preheat your oven to 375°F (190°C) and spray a 13×9 inch baking dish with non-stick spray.
- In a nonstick skillet, cook the ground beef over medium-high heat for 5-7 minutes, or until fully cooked. Drain any excess grease.
- Mix ½ cup of enchilada sauce and chopped green chiles into the cooked ground beef.
- Pour ½ cup of enchilada sauce evenly across the bottom of the prepared baking dish.
- Place ¼ cup of the beef mixture down the center of each tortilla, adding approximately 1 tablespoon of shredded cheese, then wrap the tortillas tightly around the filling and place them seam side down in the baking dish.
- Spread the remaining enchilada sauce on top of the wrapped tortillas and sprinkle the leftover cheese over it.
- Bake in the preheated oven for 20-25 minutes, or until the dish is hot and bubbly. Allow it to sit for 5 minutes before serving.
Notes
For a spicier version, add jalapeños to the beef mixture.
You can use corn tortillas instead of flour tortillas if preferred.
Feel free to top with sour cream or guacamole before serving.
