  • 1 pound boneless skinless chicken breast, cubed
  • 1 pound boneless skinless chicken thighs, cubed
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon smoked paprika
  • ¾ cup light mayonnaise
  • ¼ cup plain Greek yogurt
  • 2 tablespoons sweet chili sauce
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 pinch kosher salt
  • sesame seeds, optional, to sprinkle


Instructions

  1. In a small bowl, whisk together the mayonnaise, Greek yogurt, sweet chili sauce, sriracha, honey, rice vinegar, garlic powder, onion powder, and a pinch of kosher salt.
  2. Set aside half a cup of the mixture for dipping sauce. Use the remaining sauce to marinate the chicken.
  3. Season the cubed chicken breast and thighs with kosher salt, ground black pepper, and smoked paprika. Toss with the marinade to coat well.
  4. Cover and refrigerate for 30 minutes, allowing up to 4 hours for marinating.
  5. Thread the marinated chicken pieces onto skewers, alternating between breast and thigh pieces for added flavor.
  6. Preheat the grill or grill pan to medium-high heat and grill the skewers for 4-5 minutes on each side.
  7. For oven cooking, bake at 425°F for 18-20 minutes, broiling for the last 2 minutes for a charred effect.
  8. Once cooked, brush with the reserved sauce and sprinkle sesame seeds over the skewers.
  9. Serve warm, with the remaining sauce on the side for dipping.

Notes

Make sure to reserve sauce before using it with raw chicken to avoid contamination.
You can use any combination of chicken, adjust marinating time based on the thickness of the pieces.
