- 1 pound lean ground beef
- 1 ounce taco seasoning mix, from 1 packet
- 8 ounces refried beans, from can
- 6 ounces sour cream
- 2 large ripe avocados
- juice of half a lime
- ¼ cup freshly chopped cilantro
- ½ small red onion, chopped
- 1-2 large chopped jalapeños, optional
- ¼ teaspoon kosher salt
- ¼ teaspoon garlic powder
- ¼ teaspoon freshly ground black pepper
- 3 vine-ripened tomatoes, seeded and diced
- 1 cups shredded cheddar or Mexican blend cheese
- 4 stalks fresh green onions, thinly sliced
- 1.5 ounces sliced black olives, drained
Instructions
- In a heavy skillet, combine ground beef with half of the taco seasoning. Cook over medium heat until fully cooked, then drain.
- Mix the cooked beef with the refried beans and set aside.
- In a bowl, whisk sour cream with the remaining taco seasoning. Set aside.
- Peel and mash the avocados in a bowl, adding lime juice. Stir in cilantro, red onion, jalapeños (if using), salt, garlic powder, and black pepper, then set aside.
- In an 8×8 inch serving dish, layer the beef/bean mixture, sour cream mixture, avocado mixture, diced tomatoes, and shredded cheese in order.
- Finish it off with a layer of green onions and sliced olives. Wrap the dish tightly, chill, and serve with tortilla chips.
Notes
Add more or less jalapeños based on your heat preference.
This dip can be prepared a few hours in advance for easy serving.
Serve with assorted tortilla chips or fresh veggie sticks for a healthy twist.
